3 Upgrades to the Classic BLT

Blt 2

Summer is almost over, but my tomato plants are completely in denial about it and are still giving me fruit and even trying to flower again. Even though I love fall, I am also holding on to summer for just a tad bit longer! One of my favorite things to do with a garden fresh tomato is to put it on a BLT! While a classic BLT will never go out of style and I mean no disrespect to him, I have been playing with a few different spins on the bacon and tomato sandwich.

 Reuben BLT with Southern Comeback Sauce

  • Bacon
  • Swiss cheese
  • Sauerkraut
  • Tomato
  • Lettuce
  • Comeback sauce (recipe below)
  • Marble rye

Toast the marble rye and pile a layer of bacon and a couple slices of Swiss cheese. Melt cheese either in the oven, a toaster oven, or skillet. Build sandwich with other ingredients and slather the top bread slice with comeback sauce. You may want to keep some extra sauce handy for dipping, too.

Comeback Sauce

  • 3/4 cup mayo
  • 1/4 cup chili sauce
  • 1 tablespoon lemon juice
  • 2 teaspoons (or more!) hot sauce
  • 1 teaspoon Worcestershire
  • 1/2 teaspoon paprika
  • 1/2 teaspoon horseradish powder
  • 1 teaspoon garlic powder
  • 1 teaspoon mustard powder
  • 1/2 teaspoon salt
  • A sprinkle of cayenne (or more!)

Mix ingredients together until smooth. You can store extra in the fridge for about one week. Comeback sauce originated in Mississippi and is similar to Louisiana rĂ©moulade.  Many restaurants in the south have their own take on the sauce... some call for ketchup, more mayo or chili sauce, or other secret ingredients. I haven't met a comeback sauce that I wasn't fond of :-)

  Blt 3

 Bacon Avocado Sliders with Garlic Aioli  

  • Bacon
  • Avocado
  • Tomato
  • Garlic aioli (recipe below)
  • Pretzel dinner rolls

Slice and toast pretzel rolls, spread slices with aioli, and assemble sliders with remaining ingredients.

 Garlic Aioli

  • 1/4 cup mayo
  • 1 tablespoon lemon juice
  • 1-2 cloves garlic (or 1 1/2 teaspoons garlic powder)
  • 1/2 teaspoon black pepper

If you are using garlic cloves, mince before blending with other ingredients or throw in a food processor.


Blt 4

 Basil BLT (aka BBT!)

  • Bacon
  • Tomato
  • Fresh basil leaves
  • Mayo
  • Sliced bread

This one is the most simple of the 3 variations, but the basil really gives a robust element to this classic. Can also be cut into mini's for little snack bites!
